Site & Vines: All estate fruit. Folle Blanche 30% Chardonnay 30% Melon de Bourgogne 20% Cabernet 20% 

Vinification & Elevage: Hand harvested. Each variety ferments separately in underground concrete tank then blended. Secondary fermentation takes place in bottle with Champagne yeasts. Aged "sur lattes" for one year minimum. No dosage at disgorgement. 2012 is the last vintage the domaine made this wine.

Suggested Pairings: smoked salmon, scallops and raw fish, homemade sesame breadsticks, and oysters.

Notes: This champagne method, no dosage sparkler is precise and mineral driven with a fine effervescence and long finish. The minerality most typically found in the domaine's Gneiss based single parcel bottling is the driving force of this wine, punctuated by red fruits and a powerful, textural finish.  Six years in bottle and this wine has the texture and length to prove it while retaining acidity and liveliness. We've been lucky enough to snag the last half palate of this wine so get it while you can!

MUSCADET SEVRE ET MAINE, "CLASSIC"

Vinification & Elevage:  hand harvested, pressed pneumatically and aged for 12 months on the lees in underground concrete tanks.

Suggested Pairings: Seafood platter, a fatty fish (mackerel / sardine / salmon type), herbed rabbit terrine, caramelized onion tart, and of course...Oysters!

Notes: Smoky notes on a background of citrus and white flowers. The domaine's entry level Muscadet offers more mineral expression, definition and texture than most entry level Muscadet sur lies. 

MUSCADET SEVRE ET MAINE, "GRANITE"

Site & Vines: Single Parcel of Melon de Bourgogne on Granite. 50-60 year old vines.

Vinification & Elevage:  Hand harvested, pressed pneumatically and aged on the lees for 15 months in underground concrete tank. 

Production: 35hl/ha; 23,400 btls, 400 mags

Age-ability: Will age for over 10 years.

Suggested Pairings: Lobster tartare, Sushis and sashimi of white fish, seabass and seabream, refined oysters, crayfish. 

Notes: Pronounced flint, citrus and salty notes, salty notes. This is the most crystalline and direct of the single parcel bottlings. It's the most age-worthy and seems almost upright as opposed to broad on the palate, in spite of being deeply textured and having a long finish. A wine with a great length and an iodized persistence.

Suggested Pairings: Mussel soup, shortbread pie, andouille and monkfish duo, Eels and frogs legs Provencal, Tuna Lasagna & Zucchini, Sushi and Sashimi, Chicken.

Notes: Orchard and citrus, almond, white flowers, and flint. On the palate this is the softest and densest of the 3 single parcel Muscadets, but does not lack bright or the tell-tale saline mineral finish.

MUSCADET SEVRE ET MAINE, "ORTHOGNEISS"

Site & Vines: Single parcel Melon de Bourgogne on Orthogneiss. 50-60 year old vines. This is the domaine's warmest exposed parcel planted to Melon.

Vinification & Elevage:  Hand harvested, pressed pneumatically and aged on the lees for 15 months in underground concrete tank.

Production: 35h;/ha; 17,800 btls, 300 mags 

Age-ability: 10 years+

Suggested Pairings: Asian cuisine, hot oysters, fish curry, Cassolette, Lobster.

Notes: Subtle exotic fruit, citrus and spice notes dominate with the piercing iodized minerality on the palate. Complex on the palate and finish with a luxurious mouthfeel. Reminiscent of a dry Alsatian riesling.

Site & Vines: Melon de Bourgogne from the Granite and Orthogneiss parcels.

Vinification & Elevage:   Hand harvested, pressed pneumatically and aged on the lees for 24 months (12 months in concrete, 12 months in neutral oak barrel) and an additional 12 months in bottle prior to release. 

Production: 3500 btls, 250 mags

Age-ability: Best to decant if drunk young, will age up to 10 years.

Suggested Pairings: Lobster tartare, scallop carpaccio, Sushi and sashimi of white fish, pan-fried abalone, sea bass, monkfish in sauce, grilled salmon, chicken and morel mushrooms, seared foie gras, prawn risotto.

Notes: With aeartion this wine is effusive - fragrant white flowers, dried fruits, almonds and toasty notes. Oily and opulent mouthfeel counterbalanced by lively acidity. complex, structured and powerful powerful, this is a stunner.

Notes:  Darkly fruited and concentrated with a suave attack and rich and deep mid palate with some noticeable tannins on the finish.

Domaine de l’Ecu was founded by pioneering Guy Bossard in 1972, certified organic in 1975 and certified biodynamic by Demeter in 1998. The domaine has been producing unique, single terroir Muscadet for almost 40 years running and makes a stunning array of Vin De France bottlings as well. Fred Niger, who trained extensively with Guy before taking over the estate in 2012, is an equally hands on owner and fanatic in the vineyards. He crops extremely low, and produces Muscadets that have remarkable depth, precision, as well as ageability. Like Guy, Fred is deeply committed to biodynamic and organic practices but he takes these commitments even further by incorporating various types of energy work, working in terracotta amphora, and using minimal to no sulfur. Fred continues to make the domaine's stunning single parcel Muscadets maintaining their benchmark quality, while expanding the domaine's offerings with myriad single variety bottlings beyond the appellation's Melon de Bourgogne and fermenting and ageing in amphora.

In the vineyard, soils are worked and green harvesting is essential in order to keep the high yielding, workhorse Melon de Bourgogne in check. This helps aerate the vines protecting them from mildew and also encourages greater expression of site in the fruit as the vine spends less energy on non fruit-bearing growth. Everything is harvested by hand. There is no modern technology in the the cellar, not even pumps. All cuvées are fermented with native yeast and gravity is used throughout the cellar, from receipt of the harvest and pressing into the fermentation and ageing vessels, whether it be an underground cement tank for the Muscadets or neutral barrel or terra cotta amphora.

Why amphora? Amphora are made of the earth, and therefore the perfect medium for working as close to the earth and naturally as possible. Fred believes amphora are the natural extension for the domaine and allows for a more pure expression of the terroir without any outside interference. In addition, ageing in amphora harmonizes the texture, softening tannins and giving a wine, even when young, structured and age-worthy, a rounded, velvety mouthfeel. These wines are as delicious as they are beautiful to look at! 

Depending on the cuvée, sulfur is either used minimally or not at all. Total sulfur levels at a max are 30/40mg/l, which is less than half of the max allowed by Demeter (their limit is 90mg/l), which itself is already far more restrictive than the max levels allowed with  "Agriculture Bio" certification ( French organic certification), which is 150ml/l. As Fred likes to say, he makes wines "without fuss, farce, or make-up".

Most notably, Fred continues to go beyond the limits of standard Muscadet and the Melon de Bourgogne grape with his stunning VDF wines, impressive not in the least because they have no added sulfur and yet ring with a purity, vibrancy and clarity that defies what one thinks is possible with natural wines. The Estate VDF bottlings use mature vines originally planted by Guy Bossard. Fred has also recently spearheaded two new projects, Les Temps de Copains and Love & Grapes.

Suggested Pairings: A deli board, steak and fries, chicken and potatoes with thyme, hare terrine, braised bacon, mashed potatoes and sautéed cabbages, or lamb with prunes.

Notes:  A young & juicy syrah that is light on its feet. The aromatics are all spice & florals and the palate is clean and bright.

Sites & Vines: 100% Vermentino from Tuscany. All certified organic and biodynamic estate fruit from a single 1 ha parcel at the Cosimo Maria Masini estate in Tuscany. South-western facing parcel on clay-limestone. The parcel is rich in pleistoscene era fossils. Harvested by hand.

Vinification &Elevage: Vinified at Cosimo Maria Masini by Francesco di Filippis. Then aged in amphora at Domaie de l'Ecu. 4 day skin maceration before pressing in pneumatic presses. Native yeast fermentation. Aged in 400 liter amphora for 9 months. No fining, filtering or sulfur added.

Production: 40hl/ha; 1,320 btls

Age-ability: Can be aged 5-7 years

Suggested Pairings: Scallops, seafood, cream sauces, egg dishes and white truffle. Steamed mussels, Seafood past & risotto Carpaccio of swordfish, garlic, ginger, a drizzle of very green olive oil. Pecorino.

Notes: Ripe citrus, green almond, notes of white flowers and delicate notes of sweet spice. Mineral, incisive, yet round with voluminous texture at the same time. Great aromatic richness and length and yet it has an incisive minerality, making this a wonderful pairing wine.

Vinification & Elevage: Harvested & vinified by Benoit Landron at his estate. Everything done by gravity, no pumping. Short, 10 day maceration, whole cluster fermentation with native yeast, followed by pneumatic pressing.

Aged in 450 liter amphora at Domaine de l'Ecu. Not fined or filtered and no sulfur added.

Production: 36 hl/ha, 3,375 btls

Age-ability: Can age up to 5-7 years

Suggested Pairings: Roast veal. Poultry.  Grilled beef in shallot sauce. Veal with cream. Beef stew. Soft bloomy rind cheeses such as Camembet, Brillat- Savarin, Neufchâtel.

Notes: Bright red fruits, sweet spices and floral notes. Structured mid-palate with fine grained tannins and long, deep finish.

Suggested Pairings: All manner of game, foul and mushroom dishes. Poultry of Bresse with cream and new carrots. Roast veal, reduced juice, new browned turnips. Iberian pig. Cheeses such as Fourme d'ambret, Saint-Marcellin, Maroilles.

Notes: Chiselled wine, pure and crystalline. 
Intense and captivating nose that is much darker and wilder than one might expect with gamay. Hints of cocoa and mint with velvety tannins and a long textured finish.
