Type: dry sparkling, extra brut (no dosage) blanc de noir 

Appellation: Champagne

Site & Vines: 100% Pinot Noir from massale selection. Single parcel in Polisot on Kimmeridgian limestone.

Vinification & Elevage:  Vinified with  and aged in stainless steel. Yeasts cultivated from estate vines are used for both primary and secondary fermentations.

Production: 6000 bottles

Notes: A vivacious yet focussed wine with energy, pure mineral expression and impressive length and richness. As the name suggests, this cuvée is deeply resonant. 

The name“Résonance” according to Dominique, refers to the balancing energies of earth and sky that affect the creation of a wine from its surrounding terroir.

"CONCORDANCE"

Type: dry sparkling, extra brut (no dosage) blanc de noir 

Appellation: Champagne

Site & Vines: 100% Pinot Noir from massale selection. Single parcel in Polisot on Kimmeridgian limestone. Harvested from top of the hill/parcel where the fruit is ripest.

Vinification & Elevage:  Fermented and aged in neutral wood without any sulfur used. Yeasts cultivated from estate vines are used for both primary and secondary fermentations. Bottled without the addition of sulfur and a no dosage disgorgement.

Production: Limited

Notes: One of  Dominique's softer and plusher bottlings.

This no-sulfur cuvée is only made in certain years when Dominique deems the fruit impeccable enough. Hence the name "Concordance" - everything must be in perfect alignment for this cuvée to come about. 

ELOQUENCE

Type: dry sparkling, extra brut (no dosage) blanc de blanc 

Appellation: Champagne

Site & Vines: Single parcel of Chardonnay located in the village of Polisot near the Pinot vineyard in the Cote des Bars. Massale selection, 15-20 yr old vines.

Vinification & Elevage:  Vinified and aged in neutral barriques. Yeasts cultivated from estate vines are used for both primary and secondary fermentations. Bottled with a no dosage disgorgement.

Production: Limited

Notes: Reminiscent of Chablis with bubbles, this Blanc de Blanc is full, yet chiseled with unreal mineral character.

EFFLORESCENCE

Type: dry sparkling, extra brut (no dosage) blanc de noir 

Appellation: Champagne

Site & Vines: Harvested from massale selection vines 35-40 years in age from a single parcel located in Polisot (Cote des Bar). Harvested from the bottom of the hill where there is more clay.

Vinification & Elevage:  Vinified and fermented in used barriques. 

Yeasts cultivated from estate vines are used for both primary and secondary fermentations. Bottled with a no dosage disgorgement.

Production: 9000 bottles

Notes:  A wonderful elegance and finesse, its subtle red cherry and berry notes feeling silky and refined as well as intensely fragrant.

A perfectly balanced non-dosé with exuberant red fruit aromatics and finesse and power throughout. 

For Dominique, “Efflorescence” refers to “something that evolves in perpetuity” or a slow unfolding. Starting with the evolution encouraged by the small oxygen exchange in barrel, she feels that this wine in particular will reveal itself over time and is particularly ageworthy.

Production: Limited

Notes: Heady red fruits with mineral cut and intensity. This is an elegant and powerful rosé.

Certified Organic & Biodynamic

Dominique Moreau has been making single varietal, single vineyard, single vintage, no dosage Champagnes from her tiny 2.5 ha estate since 2005. The vines were planted in the 1970's from massale selection and are farmed organically & biodynamically. The Côte-de-Bars is Champagne's southern most region, closer to Chablis than Reims, and has the same Kimmeridgian limestone as Chablis. The region's warmer temperatures and Kimmeridgian soils excel at making Pinot Noir that is rich and textured while retaining acidity and freshness. Dominique named the estate after her grandmother, Marie Courtin, who Dominique recalls as a strong woman of the earth.

All of the domaine fruit comes from a single vineyard of massale-selection Pinot Noir, with a small amount of Chardonnay and Pinot Blanc scattered about, planted in the 1970s by her father-in law.

Obtaining ripe, pristine fruit is primordial since Dominique's wines are non-dosé wines and don't have the addition of sugar to round out the hard edges and mask imbalances. Therefore, the parcel is farmed organically, has been certified since the 2009 vintage, and has been undergoing biodynamic certification as well. Dominique makes her own compost, plows, and focuses on debudding in the spring in order to reduce the chances of rot, always a risk in this damp region. This combination of diligent vineyard work, low yields, clay-limestone soils and a southern exposure gives these wines both power and precision, with energy and lots of mineral intensity.

The fruit is fermented with a yeast strain that was cultivated exclusively from her grapes during the 2003 harvest. These native yeasts are used for both primary and secondary fermentations.

The names of the wines carry spiritual significance for Dominique as well.

She recommends that her wines be served in traditional white wine glasses to allow for their development through increased aeration.
